Vegetable Soup

If the idea of eating on a budget conjures up images of pot noodles and instant mashed potato, think again.

Eating cheap does not mean scrimping on flavour and quality and can be nutritious and delicious when you know how.
Try out these simple budget recipe suggestions:

Pasta Surprise

Boil 100 gs of dried pasta for 20 minutes in salted water. Fry an onion in a table spoonful of vegetable oil. Add 1 tin of tomatoes. Season to taste. Drain pasta. Stir in sauce. Eat.

Cost per serving = 70 pence

Cheese on Toast

Take two pieces of bread. Switch on/light the grill. Toast one side of the bread. Grate or slice enough cheese to cover the bread. Put the cheese on the bread. Leave under the grill until the cheese is bubbling. Caution: overcooking may set off smoke alarm.
Add brown sauce and seasoning to taste. Delicious. Eat.
(You may also follow this recipe using beans, spaghetti, marmite, sardines, scrambled egg or in fact anything that will sit comfortably on a piece of toast).

Vegetable Soup

Fry a chopped onion in oil. Add a clove of garlic (chopped or crushed). Peel one large potato for each person, removing any blackened bits and cut into dice. Peel and chop seasonal vegetables: there may be a couple of parsnips, some carrots, Swede etc.. Lurking in the back of the cupboard). Add salt, pepper, cumin, mixed herbs and simmer for 25 minutes. Add 1 litre of full fat milk. If you are really piggy, add a nob of crème fraiche. Serve and enjoy.

Chicken Salad

Take half an iceberg lettuce. Remove any brown bits. Chop and lay in the bottom of a bowl. Add some chopped tomatoes, cucumber, and fresh coriander. Cut a breast of chicken into strips. Fry in olive oil until golden brown. Layer the chicken over the salad. Mix some balsamic vinegar with olive oil and a little salt and pepper. Pour the dressing over it. Add some pine kernels or sesame seeds for a twist of luxury. Toss away and enjoy!
